Oatmeal Date Bars

Sweet, hearty, and nutritious oat and date bars are the perfect treat. They’re simple to make, though it’s best to prepare them in advance as they need to chill in the fridge for at least 5-6 hours after baking to reach their full flavor potential. This recipe is designed for a 30×20 cm baking dish.

Ingredients:

  • 2 cups of soft dates
  • 1 cup of rolled oats
  • 1.5 cups of oat flour
  • 3/4 cup of coconut oil

* Use soft dates (not dried). To make them easier to peel and pit, soak them in a bowl of hot water beforehand.
* You can make oat flour by blending rolled oats in a blender.
* To measure out half a cup of oil more easily, use liquid coconut oil (coconut oil becomes liquid at temperatures above 19-23°C, if your oil is solid just heat it a bit).
* For a gluten-free version, use gluten-free oats.

Old Fashioned Rolled Oats

Instructions:

  1. Preheat your oven to 175°C (350°F).
  2. Soak the dates in hot water, then peel and pit them. Mash the peeled dates with a fork until you get a smooth paste.
  3. Add the oats, oat flour, and coconut oil to the date paste. Mix until well combined.
  4. Line the bottom of your baking dish with parchment paper.
  5. Press the mixture evenly into the prepared baking dish using your fingers.
  6. Bake at 175°C (350°F) for 23-25 minutes.
  7. Remove from the oven and let cool completely. Once cooled, cut into squares and place them in an airtight container in the refrigerator for 5-6 hours.

Store the bars in an airtight container in the refrigerator.
