3-Ingredient Vegan Banana Cookies | Healthy Breakfast

Simple, wholesome, quick cookies for breakfast. We make them almost every morning. They don’t contain any flour, sugar, or eggs. You only need three ingredients and 15 minutes, then just keep an eye on them periodically in the oven. They’re best enjoyed straight out of the oven while they’re hot, tender inside, and golden outside. So, here’s what you’ll need:

  • very ripe bananas
  • rolled oats
  • chia seeds
  • chocolate chips for decoration (optional)

Mash the bananas with a fork, gradually add oats and chia seeds to the bananas, mixing until the mixture is neither too liquid nor too thick. The mixture should be more banana than oats, otherwise, the cookies will turn out dry and not sweet. Use a fork or spoon to scoop the cookies onto a baking sheet lined with parchment paper, decorate with chocolate chips if desired.

Bake at 180°C for about 25-30 minutes. Once the edges slightly brown, they’re ready to be taken out. Bon appétit!
